For example, if the recipe calls for:<\/li>\n<\/ol>\n<ul>\n<li style=\"list-style-type: none;\">\n<ul style=\"list-style-type: square;\">\n<li><strong>soy sauce <\/strong>&#8211; the specific soy sauce used must be clearly identified (the brand name, the type of sauce: original, tamari, reduced sodium version, etc.), as the exact nutritional value will vary depending on the manufacturer&#8217;s sauce formulation;<\/li>\n<li><strong>mozzarella<\/strong> &#8211; is it standard mozzarella, a light version or pizza mozzarella? The cheese&#8217;s technical data sheet is necessary to obtain the nutritional value of the exact cheese used because similar cheeses will not have the exact same nutritional value: they could, for example, be more or less fat, more or less salty.<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<p style=\"padding-left: 25px;\">The less specific the ingredient data, the greater the margin of error.<\/p>\n<p style=\"padding-left: 25px;\">Even simple ingredients require precise descriptions. For example:<\/p>\n<ul>\n<li style=\"list-style-type: none;\">\n<ul style=\"list-style-type: square;\">\n<li><strong>butter<\/strong> &#8211; is it salted, sweet or semi-salted?<\/li>\n<li><strong>white rice<\/strong> &#8211; is it raw or processed (parboiled or cooked)?<\/li>\n<li><strong>white flour<\/strong> &#8211; is it bread flour, pastry flour or all-purpose flour? Depending on the type of flour, the protein content will vary.<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<p style=\"padding-left: 25px;\">It is therefore important to provide the technical data sheets for the ingredients used.<\/p>\n<p><span style=\"padding-left: 10px;\">2. <\/span> the <span style=\"color: #005a84;\"><strong>amount<\/strong> <\/span>of each ingredient must be provided in <strong><span style=\"color: #005a84;\">metric weight<\/span><\/strong> (g or kg) or as a <span style=\"color: #005a84;\"><strong>percentage by weight<\/strong><\/span>. Even <strong><span style=\"color: #005a84;\">liquid<\/span> <\/strong>or <span style=\"color: #005a84;\"><strong>powder<\/strong> <\/span>ingredients must be supplied by <span style=\"color: #005a84;\"><strong>weight<\/strong> <\/span>rather than volume. For example:<\/p>\n<ul>\n<li>Consumption of 1 cup of <strong>green tea increases antioxidant capacity <\/strong>in the blood.<\/li>\n<li><strong>Barley fibre helps lower cholesterol<\/strong><\/li>\n<\/ul>\n<h3><span style=\"color: #005a84;\">Nutrient Function Claims<\/span><\/h3>\n<p>explain the role of specific nutrients contained in the product, such as:<\/p>\n<ul>\n<li><strong>Calcium aids in <\/strong>the formation and maintenance of bones and teeth<\/li>\n<li><strong>Vitamin E, a dietary antioxidant<\/strong><\/li>\n<\/ul>\n<h3><span style=\"color: #005a84;\">Disease Risk Reduction Claims<\/span><\/h3>\n<p>linki a food or nutrient to a reduced risk of developing a diet-related disease or condition in the context of the total diet. For example:<\/p>\n<ul>\n<li><strong>A healthy diet low in <\/strong>saturated and trans fats <strong>may reduce the risk <\/strong>of heart disease.<\/li>\n<li><strong>A healthy diet rich in <\/strong>a variety of vegetables and fruit m<strong>ay help reduce the risk of <\/strong>some types of cancer.<\/li>\n<li>Non-cariogenic.<\/li>\n<\/ul>\n<p>The regulations also allow other types of claims: quantitative and comparative nutrient-content claims, probiotic claims, weight maintenance claims, Canada\u2019s Food Guide servings claims, etc.<\/p>\n<p>Of course, each claim is subject to <strong>several conditions<\/strong> prescribed in the Food and Drug Regulations.
